Homemade sicilian prosciutto - raw meat cured with sea salt and spices hanging upside-down in my sister's father-in-law's cellar for two years.
It's not thinly sliced, covered in nitrates and then rinsed off like the commercial prosciutto you find at the supermarket. This is the real deal.
Being essentially uncooked, the meat is especially chewy - this is (maybe...) the closest I'll ever get to feeling like the king of the jungle feasting on his prey.
Prosciutto plus Chilean red wine times Camembert divided by fresh melon equals awesome.
